Cauliflower Crust PizzaSo, today, I decided to make a healthy delish dish not because I was super hungry post-workout, but because I wanted something filling, and wanted to exercise my creativity.
Many people think that following a plant-based diet is boring and not satisfying or satiating.
The key is to eat nutritionally dense, not calorically dense foods.
Chow down on some yummy plant-based dishes to get loads of protein and vitamins and minerals, and still feel amazing after the meal.
Today’s special… cauliflower crust pizza with goat cheese and veggies, and a crafted watermelon mint gluten-free vodka cocktail.
Refreshing and satisfying and guilt-free.

Cauliflower Crust Pizza - IngredientesCAULIFLOWER CRUST PIZZA

show some cruciferous love

  • 1 medium head of cauliflower.
  • 2 eggs.
  • 1/4 teaspoon sea salt or himalayan salt.
  • 1/8 teaspoon black pepper.
  • 1//4-1/2 tspn dried basil.
  • 1/4-1/2 tspn dried parsley.
  • 1/4-1/2 tspn dried oregano.
  • 1/8 teaspoon cumin powder.
  • 1/8 tspn cayenne pepper or crushed red pepper.
  • 1/2 teaspoon garlic powder.
  • 4 tbspn gluten-free oat or almond flour or mplain gluten-free flour.
  • 1 tbspn olive or avocado oil

(you can be creative with the spices and what the consistency of your “dough” is…
I am pretty free-form in the kitchen and do not really measure things…I like to experiment)
Preheat oven to 450 degrees F.
Wash cauliflower head and cut into pieces.
Place in food processor and blend until cauliflower is fine.
Cauliflower after blended can be watery, so get a porous cloth, like cheese-cloth or heavy duty paper towels and wring the water out.
You can heat the cauliflower in the microwave for 2-3 minutes to help the water come out easier.
Place in large bowl.
Mix in the eggs, salt, pepper, spices, flour and oil.
Form “dough” into a ball and place on a pizza pan lined with parchment paper or oiled foil.
Pat it down and spread it out with your fingers in the form of a pizza crust.
Bake in oven for about 12-15 minutes.
Now add pizza sauce and any toppings you like.
I suggest staying plant-based, but it is up to you what you want to add.
You can do a cheese-less version as well.
I personally use some goat cheese, peppers, onions and spinach.
You can use mushrooms, olives…and if you want, organic chicken.
Drizzle some olive oil over the top and sprinkle some dried spices to your liking.
Bake pizza for 10 minutes, but time can vary depending on how crispy you want it, or what toppings were added.
The drink in the second pic depicts an “adult” drink with the well-done pizza.
It is gluten-free vodka with fresh muddled watermelon and mint.
