This was an experiment in serendipity…
and I love it.
In an effort to find something fun and tasty, but healthy for my three boys (and myself, because who doesn’t have a sweet tooth occasionally?), I threw together a bunch of gluten-free ingredients.
I prefer not buying processed cookies that contain loads of unhealthy ingredients that you cannot even pronounce and that are not even possibly classified as “food” because they are synthesized in some lab.
If you cannot pronounce the ingredients, do not buy it.
Sometimes I think there is more nutrition in the cardboard box of Mac and Cheese with all the nonsense they put in there.
I mean, the artificial Yellow 5 and 6 dyes are never a good thing, especially for growing children, or adults for that matter.
Depending on the quantity you desire, measurements can be adjusted.
This is just a rough guideline.
- 1/4 to 1/2 cup coconut flour.
- 1/4 to 1/2 cup almond or gluten-free oat flour.
- 1/4 cup unsweetened shredded coconut (optional).
- 1/2 cup coconut sugar (depends on sweetness desired, also consider organic maple syrup).
- 1/3 to 1/2 cup coconut oil (depends on consistency you want).
- 3/4 cup dairy-free, soy-free, gluten-free chocolate chips, mini or regular size.
- 1/4 teaspoon Himalayan salt.
- 1/4 tspn baking soda.
- 1/2 tspn vanilla extract.
Now, here is where you can experiment.
If you want to bake it, throw an egg or two in there. (350 degrees F for about 12 minutes)
If you do not want to bake it, you can still throw a raw egg in there which gives some moisture and consistency, but you must keep the dough refrigerated.

I know we have been told to avoid raw eggs, so use your own discretion depending on food allergies or immunity issues.
If you truly want to be vegan, then avoid eggs.
I have experimented by adding chopped nuts or dates or raisins or chia or hemp seeds or flax powder or protein powder or almond butter.
The more you experiment, you will naturally develop twists and turns that can add a new spin on the dish.
Involve kids if they’re around.
Or adults who like to act like kids.
Let them lick that wooden spoon.
Or you lick the spoon.
Just have fun.
Get a glass of non-dairy milk, chocolate flavor for more taste and enjoy.
