Sunday dinner and dessert.
Bang bang broccoli and frozen coconut lime banana bites.
Vegan and oh so deliciously healthy.
Makes my mind, body and soul happy.
Food is the safest form of medicine or the slowest form of poison.
Let food be your medicine and your cure for ailments.
(keep in mind…it’s all about creativity and knowing what suits your palate)

Bang Bang Broccoli

For the sauce…
1/4 cup vegenaise
2 tbspn chili paste or garlic chili sauce
1 tbspn organic honey or agave syrup

For the batter…(choose if you want gluten-free or not)
1 cup almond milk or coconut milk or cashew milk
(dairy-free is the point obviously)
1 tspn apple cider vinegar (ACV)
3/4 cup gluten-free flour
1/2 cup gluten-free corn starch
2 tspn hot sauce
1 tspn salt, sea salt or Himalayan salt preferably

And for the rest…
2 cups gluten-free panko bread crumbs
1 head of broccoli
oil for frying (i like mixing coconut and olive or avocado oils)

Make the sauce in a bowl then set aside.
Make the batter by starting with ACV in almond milk.
Set aside for a few minutes.
Then add flour and corn starch and salt.
Add milk and ACV with hot sauce to the flour mixture.
Place panko in another bowl. Cut broccoli into distinct florets.
Heat oil in pan.
Dip each floret into batter then the panko, coating thoroughly.
Pan fry until awesomely brown and crispy.
Drizzle with sauce and enjoy!

Coconut Lime Banana Bites

2 cups shredded unsweetened coconut (1 cup will be toasted in oven for 10 min at 300F, and other cup is set aside untoasted)
1 ripe mashed banana
1/4 cup melted coconut butter
1/4 cup coconut milk (or cream)
zest and some juice from one lime
pinch of sea salt or Himalayan salt
optional…few tspn of coconut sugar and So Delicious whipped cream

Take ripe banana and mash it up then add the toasted cup of shredded coconut with melted coconut butter and lime zest and juice in a bowl.
Add the untoasted coconut.
You may add coconut sugar for desired sweetness along with the whipped cream for creamy texture. .
Form balls using your hands (hands are your best utensils in the kitchen) and place on tray or plate.
Cover with saran wrap and place in freezer.
These coconut lime banana bites are best served frozen or refrigerated. Yum!

And that’s healthy and mouth-watering dinner and dessert for you!
Totally not time consuming at all 🙂 That’s a bonus.
